Cava production originates in the mid-1800s as many Champagne winemakers fled France to escape the phylloxera epidemic. Many of these winemakers settled in Catalunya, where they started to produce sparkling wines with native varietals in the Méthode Champenoise - the rigorous method of production exclusively utilized to produce Champagne. Can Xa is made from 50% Xarel-lo, 25% Macabeo, & 25% Parellada; all sourced from vineyards located in Penedès, just west of Barcelona in the northeastern corner of Spain. It is aged sur lie for 9 months. Notes of lemon, nuts, bread, and bay leaf come across on the nose. With a characteristic dry and clean brut finish, this is a great sparkling option that doesn’t break the bank!
