Château de Santenay owns 25 hectares of vineyards in the Côte d'Or. Clos de Vougeot is one of the most famous grand cru vineyards in Burgundy. It is the largest grand cru site in the Côte de Nuits region, covering 50 hectares. The soils here are free-draining with a mixture of clay and sand, and a subsoil which has a high limestone content. This forces the roots of the vine to dig deep to find the vital nutrients and water they need, which in turn results in a high concentration of flavor within the fruit.
On arrival at the winery, the grapes were cold soaked for seven days at 8°C to extract color and flavor from the skins. Temperature controlled fermentation lasted 12 to 14 days. Gentle pumping over of the cap took place daily, resulting in fine-grained tannins and delicate perfumes in the finished wine. The wine was aged in oak barrels for 13 months, of which 20% were new.
