Wildfish Cannery Smoked Geoduck

It’s big. It’s weird. It’s delicious. Geoduck (pronounced "gooey-duck") is a large clam with a mild flavor, a firm texture and an appetizing golden color. Dry-cured with salt, sugar and spices before smoking. We call it clam bacon.
One of our favorite ingredients to experiment with in our test kitchen, we recommending introducing yourself to this local favorite as a simple cracker-topper or just digging in with your bare hands. Once you've become properly acquainted, set yourself up with our Geoduck Bloody Caesar and whip up any of the simple Smoked Geoduck pasta dishes in our Galley this season.
Product of Southeast Alaska and Diver-harvested
Ingredients: Geoduck Clams, Salt, Pure Cane Sugar, Spices, Natural Alderwood Smoke
Availability: In Alaska, wild geoduck is hand-harvested by divers from the seafloor, and nearly all of the harvest is shipped live to overseas markets. But through strong relationships with our local diving fleet and increased demand from our customers (that's you!) we are always able to secure a small portion of the harvest for smoking at our cannery. Nonetheless, this product may sometimes be out of stock, so due to the extremely limited availability of this product (and its ever-growing popularity) we recommend purchasing quickly—and by the case—to secure an ample supply of this unique curiosity from the sea.
