Predicador, or “Preacher,” named after Clint Eastwood’s everyman character in the 1985 film Pale Rider, is composed of fruit from 17 different plots to maximize diversity of elevation, aspect, clone, microclimate, and soil.
From un-irrigated goblet-trained vineyards in the municipalities of San Vicente de la Sonsierra and Labastida. Soils are calcareous and alluvial clay, some of them very poor in nutrients and situated on steep slopes (in the case of Viura).
Vines are cultivated with organic fertilizers and according to ecological and sustainable agricultural principles. The vines are treated only when absolutely essential and with low-impact products. The harvest is completed entirely by hand, in small containers and transported to the winery within 30 minutes to avoid oxidation. After a 24 hour maceration, the grapes are pressed and fermented ‘en barrica’ and aged for 10 months before bottling.

The cold soak and short oak contact yield floral notes of acacia and dried orange peel. They commingle with musque melón in the aromatics and flavors of green apple, ripe pear, vanilla, honeycomb and grass on the palate.
