The municipality of Volnay only produces red wines. There is no Grand Cru but 26 premiers crus. The vineyard is supported on an extremely fine subsun composed of Argovian limestone marls and in the bordering part of Pommard and Meursault, on clay-limestone scree of the Bathonian. The altitude ranges from 230 to 370 meters.

The harvest is manual in a small box in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and then shredled. The maceration of the grapes takes place in open wooden or stainless steel tanks for 3 weeks to 4 weeks. The tanks are drawn twice a day during fermentation. Aging lasts about 18 months in the barrels of our cooperage, about a third of which are new.
