The Domaine Roc des Anges Ilum is a blend of 90% Grenache Gris and 10% Maccabeu from 11 different parcels of 70 to 100 year old vines. The wine is fermented in 60% concrete vats and 40% wood. The wine slowly reveals intense complex fruits and an intense minerality. Incredibly flavorful with a broad acidity and medium body, this refreshing, reflective wine is a treasure of the Roussillon. Enjoy with rich white fish dishes, light vegetables, or light pork preparations.
